General description
Casein is a calcium (phosphate) binding phosphoprotein. It is present in mammalian milk and constitutes about 80% of the total bovinemilk proteins. Bovine milk consists of four casein peptides, such asαs1-,αs2-,β-, and κ-caseins.Casein exists in milk as micelles. Casein from bovine is produced by the mammary gland under multihormonal control.

Hydrolyzed and partially dephosphorylated. Prepared from a mixture of α, β and κ caseins.
